| Hello! I know it's been a million years since I have blogged but I have been in a real funk lately. My winter blues have taken hold of me and it's been hard to shake this terrible feeling. Those of you who know me know that I need SUNSHINE plain and simple! The lack of sunshine really takes a toll on me. I have been making myself sit outside and have a fire just so I can get fresh air and just breathe and collect my thoughts. So i won't keep rambling about my winter blues just had to put that out there... So hubby and and I cooked a delicious valentines dinner. Going out is over rated, the service is bad and if you don't make a reservation well then forget it. And as my sweet husband told me we have the best restaurant in town! How sweet is he. I have really enjoyed cooking with him. I am a bit of a control freak in the kitchen so this has been an adjustment for me but I have to say I am really enjoying it and I think he is too! I will let you in on a little secret he makes a better pizza from scratch then me ! |

| I was in charge of the side which was an asian slaw and hubby was in charge of the shrimp. The shrimp was wrapped in phylo dough , dusted with crushed pistachios and baked for about 20 min. The shrimp was served with a thai chilli dipping sauce. This was a new recipe for us and I have to say it was quite simple. My hubby picked out the recipe from Sheryl Crows new cook book If it makes you healthy. There are some fabulous recipes in this book and they are not over complicated which I love, nice and simple the way cooking should be. |

And for desert ...I made dark chocolate espresso lave cakes finished with light cool whip and fresh raspberries. Now you can't not have a little chocolate on valentines day . Now this is a splurge but it's ok to treat yourself once in awhile :-) So there you have it that is how my valentines day went for us, dinner, a little vino, great conversation with my hubby and a decadent desert. Who says you can't have a wonderful valentines day right in your own home. So what did you for valentines day? I would love to hear...
